Small Batch Lemon Loaf
Hello everyone! I hope everyone is having such a great start to the week!
I was CRAVING lemon bread all of last week, but only wanted a small amount. With that I made this easy and simple small batch lemon loaf!
Filled with bright, zesty and bold flavors, this cute little load comes together with minimal ingredients and in under 30 minutes!

Ingredients:
60g All Purpose Flour
2g Salt
2.5g Baking Soda
100g Choice of Sweetener
One Egg
52g Butter
14ml Lemon Juice
2g Lemon Zest
30ml Meyenburg Goat Milk (or choice of milk)
Icing:
120g Powdered Sugar
4-6g Lemon Juice
Directions:
in one bowl combine flour, salt and baking soda. In another bowl, combine butter and sugar. Then add in your egg, lemon juice, and lemon zest. Add half of the flour mixture, then milk and then rest of the flour mixture. Bake in a 350 degree oven for 12-15 minutes.
