Protein Gingerbread Muffins

Whether you are on the go all the time like me, or simply want to have some healthy muffins prepped ahead of the time, this is the recipe for you!


I love making batches of muffins to save for later or to have ready for breakfast!

Macros~ : 20C / 2F / 5P

Ingredients:

135g All Purpose Flour

2g Salt

3g Baking Powder

1g Nutmeg

1g Ground Ginger

1g Cloves

48g Choice of Sweetener

30g Protein World Vanilla Protein

136g Mashed Banana

30 SF Maple Syrup

2g Vanilla Extract

One Egg

40g Light Butter

26g Molasses

30g Chocolate Chips (topping)


Directions:

In one bowl combine dry ingredients. In another bowl combine wet ingredients. Add wet to dry and fold. Divide into muffin tins (makes about 10) , add chocolate chips and bake in a 375 degree oven for 25-30 minutes or until toothpick comes out clean.
