Lighter Shrimp Scampi
I had so much fun making this high protein meal! Even though it’s been super hot lately, and I was burning up making this, my experience making this was great.
Lately I have been experimenting with shirataki noodles, if you haven’t already seen, I have another recipe on my feed using these noodles. They take soak up whatever sauce you put them in and I honestly think they’re so much fun to use!
Friendly reminder that if you want to substitute “regular” pasta in this, go ahead, it tastes just as good!

14g Light Butter
125g Raw Shrimp
16g Lemon Juice
106g Any Non-Dairy Milk
170g Nupasta Konjac Spaghetti
24g Light Mozzarella
Salt & Pepper
Garlic & Onion Powder
Red Pepper Flakes
in a pan, spray non cooking spray, add onion and garlic until cooked. Add butter and shrimp. Once shrimp is cooked place to the side. Add lemon juice, non dairy milk, spices and allow to sit for about 5 minutes. Add noodles, and remaining ingredients. Let flavors combine for 15 min. Add parsley and enjoy!
