Homemade Chilaquiles

I made chilaquiles at home & I am super proud of myself. I doubted myself and told myself that I wasn’t going to be able to make this work. But I did!


First off I absolutely love the challenge of making food that I see at restaurants or on TV at home. Whenever I start to think that I could only get a certain type of dish at a restaurant or start to doubt myself, that basically “flips the switch”. Next thing you know I’m watching videos, reading recipes and learning about dishes.


So for the last couple of days I’ve been trying to plan this out & how I would approach making this. I started by using my air fryer to make homemade tortilla chips. Then I made pico, and got all my toppings together to make this while warming up the prepared sauce to throw my chips in. Gosh it was so much fun, I felt like a Chef.

I made my Mom proud today and I think that’s the best thing that came out of this dish.


𝐌𝐚𝐜𝐫𝐨𝐬: 27C / 13F / 12P
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
  • 35g Guerrero 25 Calorie Tortillas

  • 75g Sun Vista Enchilada Sauce

  • 57g Tomato

  • 25g While Onion

  • 4g Cilantro

  • 18g Avocado

  • 5g Goat Cheese

  • Lime Juice

  • One Egg

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

Cut tortillas into the shape of chips! Air-fry tortillas for about 8-10 minutes. Once crispy allow to cool. Heat enchilada sauce in a pan over medium-low heat. Once heated add chips and cook until soften. Cut onions, tomatoes, and cilantro to make a quick pico. Cook an egg to add on top along with avocado and cheese. Enjoy!
