High Protein Pozole Verde
You asked and I delivered!
I set aside the time to make this for y’all and it was so good! Making this honestly brought me back memories when my Mom and Sonia were teaching me how to make pozole verde back in 2016. They are absolutely experts and maybe I’ll drop their tamale recipe if y’all want it!
This recipe makes approximately two bowls, so it’s perfect to share or split up for two lunches or snacks.
Filled with yummy spices, this lighter pozole verde is sure to be your next go-to soup! ✨
I made this with top sirloin, which is a leaner beef, which isn’t traditional. Feel free to swap out the protein!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
- 169g Trader Joes Top Sirloin
- 78g Onion
- 8.5g Garlic
- 69g Tomatillo
- 30g Poblano Chilies
- 15g Jalapeño
- 5g Parsley
- 4g Cilantro
- 8g Knorr Boullion
- 110g Hominy
- Bay Leaf
Toppings:
- 6g Onion
- 2g Cilantro
- 11g Avocado
- Radishes
- Salt
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
In a pot add about 5-6 cups water and allow to boil. Add sirloin, onion, garlic, tomatillo, parsley, cilantro, bay leaf and boullion and allow sirloin to cook (Approx. 1 hour). Once cooked, take sirloin and bay leaf out. Blend all ingredients and add back into the pot. Add hominy and shred sirloin. Allow all ingredients to cook for another 20 minutes or until hominy is soft to the touch. Top with the above and enjoy!
