High Protein Lemon Poppy Seed Muffins
These are the most perfect lemon poppy seed muffins! In fact, you would be surprised that they have 8g of protein in each!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
83g All Purpose Flour
68g Bulletproof Vanilla Collagen Protein Powder
14g Any Sweetener
7g Cornstarch
1g Salt
6g Baking Powder
14g Poppy Seeds
One Egg
13g Olive Oil
120ml Milk Substitute
8g Lemon Extract
2g Lemon Zest
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
In one bowl, combine all dry ingredients and set aside. In another bowl combine the wet ingredients. Add dry ingredients into wet, divide batter by 6 and place into muffin tin. Place in a 375 degree oven and bake for 17 minutes.
