Hearty Tomato Basil Soup
I find comfort & peace in cooking. This is how self care looks to me. Growing up, when I didn’t feel my best, my Mom was always there with soup or a bowl of fruit to lift my spirits. Truly, so selfless and wholesome.
This is your gentle reminder to pause, take a step back from your daily life and put yourself first. However self care looks like to you, go and do it!

𝐌𝐚𝐜𝐫𝐨𝐬: 36C / 10F / 13P
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
- 350g Roma Tomatoes
- 55g White Onion
- 60g Red Bell Pepper
- 5g Ginger (optional)
- 8g Garlic
- 5g Basil
- 5g Parmesan
- One Slice Aldi Fit & Active Bread
- 17g Gouda Cheese
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
preheat oven to 400 degrees. Cut your tomatoes, onion, and bell peppers. Along with these, add your garlic and ginger to a tray. Spray with cooking oil, or add olive oil. Season with salt, pepper and garlic powder. Roast for 35-40 minutes. Once done, add all ingredients to a blender. Blend until smooth. Add soup to a bowl, top with basil, parm and grilled cheese pieces
