Easy Pumpkin Bread
October is among us and Pumpkin Spice season has been here for about a month now! If you follow me on Instagram, you know that I have been on the hunt to try as many Pumpkin Spice flavored items as possible. Last year I reached almost 35 items, and I plan to beat that number this year.
SO. Here me out! If you don’t like bananas in general, I get it. But, when you add in bananas to your baked goods…boy do they add fluffiness, moisture and sweetness! I would say bananas are the GOAT when it comes to baked goods. Feel free to disagree!
I’m going to note here that oven times will vary, as mine took about 30 minutes to cook all the way through! I also wanted to note, that with any recipe, macros will vary per how big you cut your slices. You can do this in MFP!
So let’s get to the recipe!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
113g Mashed Banana
122g Canned Pumpkin Purée
90g Cane Sugar
75g Melted Butter (& Cooled)
2g Vanilla Extract
3g Pumpkin Spice
5g Baking Soda
2g Salt
One Egg
120g All Purpose Flour
Pumpkin Seeds
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Combine banana, pumpkin purée, vanilla extract sugar and melted butter together. Add in your egg and mix again. In a separate bowl combine your dry ingredients. Once combined, add your dry in your wet ingredients. Top with pumpkin seeds! Add to a oven safe bowl, and into a 350 degree oven for about 28-33 minutes.
