Easy Focaccia Bread
I love bread.
That’s a statement that I honestly never thought I would be able to say with full honesty. Years ago I convinced myself that bread was off limits…as well as carbohydrates in general. The next 2 years of my life were spent literally restricting any type of bread based food. Flash forward to today, I give myself full permission to eat bread everyday and understand that all foods can fit. Period.
Part of my recovery with my ED was accepting and what I was craving, listening closely to it and responding to it. So yesterday, I was reminded of all the good memories I had at Souplantation eating focaccia bread, and thought to myself “let’s make it”.
This might not taste as close to the original, but it hit the spot and I wanted to share it with y’all.

𝐌𝐚𝐜𝐫𝐨𝐬 𝐩𝐞𝐫 𝐬𝐥𝐢𝐜𝐞:* 9C / 1F / 1.2P
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
- 2 Cups of Trader Joes Buttermilk Pancake Mix*
- 3/4 Cup Warm Water
- One Yeast Packet
- 6g Garlic Powder
- 6g Onion Powder
- 3g Dried Basil
- Flakey Salt
- Fresh Rosemary
- Cooking Spray (can substitute for olive oil)
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Combine all dry ingredients. Add water and mix until dough is combined. Spray an oven safe container with cooking spray. Add dough and allow to rest and rise for 30 minutes. Poke holes in the top, add rosemary and flakey salt. Bake in a 425 degree oven for about 15-20 minutes or until top is golden brown.
*Macros will vary based on the thickness of the slice
*Buttermilk Pancake Mix is meant to be versatile as it is an all purpose mix
