Butternut Squash Pasta
Fall is here and I’ve teamed up with Ancient Harvest to made the fall pasta of your dreams! With the release of their new brown rice, amaranth & quinoa rotini pasta, this meal is definitely PERFECT for any fall dinner!
I won’t lie, I ate the rest of this for breakfast the following morning. I love pasta and forever will!
Not only is this pasta packed with yummy flavors, it’s high in fiber, protein, a good source of vitamin C, Manganese, Magnesium and Iron!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
700g Butternut Squash
60g Grape Tomatoes
45g Onion
Basil
100g Half & Half
14g Olive Oil
6oz Ancient Harvest Supergrain Pasta
Garlic & Onion Powder
Salt & Pepper
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Place butternut squash, tomatoes, onion and basil on a cooking sheet. Add spices and olive oil. Place in an 375 degree oven and cook for about 25-30 minutes (or until soft). Add to a blender and blend. Place sauce in a pan and add half and half. Mix and allow to sit for about 10 minutes. Add pasta and add choice of toppings!
