Blueberry Lemon Baked Oats

I really want to say that if I haven’t made it more apparent, baked oats is where it’s at! So customizable, so delicious and so easy to make!


The not-so secret ingredient in this is lemon extract. You can find it at your local grocery store next to the vanilla extract! I would say that this was an absolute game changer to add into my oats. I totally would’ve added lemon juice into my oats, but you know, lemon juice WILL react with yogurt.

ANYWAYS. Here is the recipe!


𝐌𝐚𝐜𝐫𝐨𝐬: 36C / 6F / 23P
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
  • 28g Oats (blended into oat flour)

  • 14g Vanilla Protein Powder PEScience

  • 1/4 Tsp Baking Soda

  • 1g Cinnamon

  • 3g Splenda (or any sweetener)

  • 32g Vanilla Yogurt

  • 13ml Almond Milk

  • 1.5ml Lemon Extract

  • 52g Egg Whites

  • 38g Blueberries

  • 7g Mini Chocolate Chips

  • Lemon Zest

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

blend oats into a flour. Combine dry and wet ingredients in separate bowls. Add dry ingredients into wet ingredients. Spray oven safe container with non-stick spray. Place in a 350 degree oven for 15-18 minutes. Cool & enjoy!
